As some people know, my youngest daughter has food allergies. I've found that she can have vanilla pudding. That would be good and all but we also discovered that pudding doesn't mix all that well with soy milk.
Hmmm....what to do, what to do.
I looked at the mixture and saw that it was somewhat thickened, but not nearly pudding consistency. I wondered what would happen if we added more pudding mix?? Would it thicken with additional pudding or just form an icky clot in the bowl? I added another box, and BINGO! Pudding consistency! My daughter was dancing around the kitchen with joy. It's been ages since she's had good old Jello Pudding! So, now you know how to make it work if you don't have soy allergies.
